I've been told the best fish to use for pepper soups is croaker, I guess it's because it holds together during the cooking process better than other fishes, but I've made pepper soups with catfish, Giwan ruwa, snapper and sardines. Here is a recipe for pepper soup using croaker fish.
INGRDIENTS;
1 large fish ( dressed and cut)
2 grated onions
Garlic to taste( pasted)
1 1/2 cups of water
Handful of parsley
2 tablespoons of chilli powder
4 hot peppers ( pasted)
2 tablespoons of groundnut oil
Salt and or Maggie to taste.
METHOD;
Wash the fish with a slice of lime to get rid of fishyness, then pour the oil,onion,hot peppers,garlic and chilli in to a shallow pot and fry for 3 mins on high heat. Reduce the heat and add the water and seasoning( salt and Maggie) bring this to a slow boil, then gently add your fish and the parsley and allow it to cook for 10 to 12 mins.
