best fruit cleaning system ever!

so i saw a friend's backberry display picture and it had fruits in a sink filled with water, at the bottom of the picture was this; put your fruit; apples,berries,plums etc into a sink filled with water, add a cup of vinegar and watch as the water changes colour with the dirt from the fruits. tried it and my apples came out CLEAN!!! though gave them another rinse just in case ;).

FISH PEPPER SOUP

I've been told the best fish to use for pepper soups is croaker, I guess it's because it holds together during the cooking process better than other fishes, but I've made pepper soups with catfish, Giwan ruwa, snapper and sardines. Here is a recipe for pepper soup using croaker fish.

INGRDIENTS;
1 large fish ( dressed and cut)
2 grated onions
Garlic to taste( pasted)
1 1/2 cups of water
Handful of parsley
2 tablespoons of chilli powder
4 hot peppers ( pasted)
2 tablespoons of groundnut oil
Salt and or Maggie to taste.

METHOD;
Wash the fish with a slice of lime to get rid of fishyness, then pour the oil,onion,hot peppers,garlic and chilli in to a shallow pot and fry for 3 mins on high heat. Reduce the heat and add the water and seasoning( salt and Maggie) bring this to a slow boil, then gently add your fish and the parsley and allow it to cook for 10 to 12 mins.

SWEET CORN AND FISH SOUP

This is a very filling meal, especially if paired with flat bread or just plain bread buns.
INGREDIENTS;
Half a can of sweet corn
1 fish fillet
2 garlic cloves( pasted)
1 onion ( grated)
Salt and Maggie to taste
2 tablespoons of corn starch
2 small potatoes( soft boiled and mashed to a paste)
1 teaspoon of groundnut oil
1 cup of water

METHOD;
Bring the water and grated onions to a boil,after 10 mins take it off the heat and sieve the onion chaff out of the water and return the water back on the heat, add the salt and Maggie, garlic and oil, and cook for 2 mins on low heat. Cut the fish fillets in to bite size cubes and fry for 2 mins then take out of the oil and allow it to cool. Mix the mashed potatoes with 2 spoons of water and add it to the boiling water while stirring very well, then mix the corn starch with 4 tablespoons of water and pour in to the pot while stirring very well,finally add the sweet corn and fish cubes then allow the soup to simmer further for 5 mins on low heat.

FLAT BREAD FILLINGS (beef)

Now that you've made your flat bread, you'll need something to eat it with, here is a beefy,veggie, hummus filling for you to try

INGREDIENTS;
Half kilo minced meat
2 teaspoons do chilli powder
Garlic( pasted)
Salt and Maggie to taste
1 tablespoon of hummus
Half onion finely chopped
3 tablespoons of groundnut oil
1 green pepper finely chopped
Spring onions 1 bulb chopped
Spinach just half a handful.
METHOD;
 In a hot wok, pour in the minced meat, garlic, chilli, onions, salt and maggie, pepper, spring onions,and spinach then stir-fry till the beef is well done, take it off the heat and mix in the hummus, slather on the flat bread.

EASY PEASY FLAT BREAD.

Here is a very easy recipe for making flat bread like an expert.

INGREDIENTS;
1 cup of all purpose flour
1 tablespoon off yeast
1 teaspoon of salt
Half teaspoon of chilli powder ( optional)
Half cup of water

METHOD;
Pour the flour in to a deep bowl and add the salt and yeast, mix this in then make a well in the middle of the flour and pour in the water and begin to gently knead it, you and add more water if the flour doesn't come together or add more flour if the dough you've made is too sticky.
Once you have kneaded the dough, and it has an elastic but firm consistency to it, you can the cover and keep it in a warm dry place to rise, this can take 1 to 2 hours depending on the temperature of the room.
Take the dough out, and GENTLY knead again, then quarter the dough, and allow it to rise in a warm place for 30 mins, when the time is up, place a pan on the heat, then take the first quarter of the dough and gently knead it till its nice and flat, then lightly grease the hot pan and place the dough on it, let this cook for 5 mins on each side, or you can flip it when the dough begins to rise.

EASY PEASY CHICKEN KEBABS

You'll need;
4 chicken breasts cut in to even cubes
1 whole Garlic ( pasted)
2 tables spoons of chilli powder
Salt and Maggie to taste
1 tablespoon of honey
1 tablespoon of soy sauce
5 skewers ( wooden soaked in water)
Green, yellow and red peppers ( chopped to the size of the chicken)

METHOD;

Mix the chicken and other ingredients together in a deep pan and allow it to marinade for 2 hours, then take the skewers out of the water they are soaking in and blot them, then in turns skewer a piece of chicken and the peppers, do this till everything is skewered.
Place this in a pre heated oven and grill for 30 mins on medium heat.

EASY PEASY MEATLOAF.

Here is a simple recipe for meat loaf .

INGREDIENTS;
1 kilo minced meat
1 egg
1 onion finely chopped
1 cup of milk
Half cup of bread crumbs
Chilli pepper powder, salt and Maggie ( to taste)
2 tsp brown sugar
2 tsp mustard
Quarter cup of ketchup
Garlic ( to taste)

METHOD;
Mix everything except the mustard, ketchup and brown sugar. Gently pack the meat mix into a medium sized baking tin, rectangular in shape, then mix the mustard, ketchup and brown sugar and pour it over the meat mix in the tin and place in a pre heated oven and bake for 1 hour on medium heat.

HOME MADE TANDOORI GRILL

I watched the food network a few days ago and saw how an Indian man grilled a perfect tandoori chicken in the authentic tandoori grill, I then decided to make one of my own, if you're a foodie like I am here's how I made mine.
You'll need
1) a large clay pot without any paint or designs on it, you can get this from gardeners, make two holes at the bottom of the pot then dig a hole in the ground, and place the pot in a slanted position with only half of the pot sticking out.
2) a supply of coal.
To start the oven first heat the coal till its red hot, the pour the coal in to the pot and fan well. THIS GRILL SHOULDN'T BE IN AN AREA WHERE KIDS CAN COME IN CONTACT WITH IT!!! This grill will make anything from fish, chicken and beef, and probably some flat bread.
Have fun using it!

PERI PERI MARINADE

So we've all had a version of peri peri chicken right? I've always wanted to know how the marinade was made, so I asked a friend and she emailed me a list of ingredients, the thing was some of the things she sent me in the list, I didn't know where to find them in Nigeria so I decided to improvise, and BOY did it work out well!!! So here's my version of the peri peri marinade ( it's called peri peri there, here we call it tsiren kaza ;))

INGREDIENTS;
Half cup of paprika spice
3 tablespoons of chilli powder
1 cup of lime or lemon juice
Whole garlic
1 ginger root ( grated)
Salt and or Maggie to taste
Fleshy parts of a chicken( deboned and skinned)
Half cup of groundnut oil

METHOD;
First you mix all the ingredients and give the chicken a good rub, cover in a plastic dish and marinade for 3 to 4 hours.
Next you take the chicken out of the marinade and skewer it, then in a preheated oven grill the chicken for 30 to 40 mins.

ENJOY.

Hot ribs

You can use ribs from lamb,sheep or rams for this recipe, I use ribs from rams.
You'll need;
Ribs( well dressed with all the sinew removed)
3 tablespoons of honey
3 teaspoons of soy sauce
2 teaspoons of oyster sauce
2 tablespoons of brown sugar
1 ginger root ( grated)
6 garlic cloves ( pasted)
1 sachet of tomato paste
Salt and Maggie to taste
2 tablespoons of chilli pepper
Chopped parsley

METHOD;
Put the ribs in a ceramic dish, mix all the ingredients and pour over the ribs, make sure u rub the marinade into the ribs, cover with cling film and refrigerate for 5 to 24 hours, the longer it stays the more the ribs absorb the marinade, the juicer your ribs.
When you are satisfied with the marinade time, you can now begin the grilling process, take the ribs out of the ceramic dish and put in to a pre heated oven, grill for 40 mins on low heat or till it reaches your preferred cooking consistency. Add the remaining marinade while the ribs are grilling, and make sure you turn the ribs to give you a uniform grill.

Pineapple-ginger drink

This is a very versatile recipe, you can add almost any fruit to it to give it an extra kick. Today we'll be using just pineapples and ginger.
INGREDIENTS;
1 large ripe pineapple (peeled and chopped to cubes)
2 ginger roots(grated)
1 cup of sugar
1 tsp of sugar

METHOD;
Boil the ginger and strain, then allow it to cool. Pour the pineapple cubes in to a blender or food processor and work for 2 mins. Take out the blended pineapple and squeeze out the juice, add this to the ginger water then pour in the sugar and stir fell till sugar dissolves.
IF YOU WANT A COCKTAIL FEEL TO THIS DRINK, YOU CAN ADD SOME CRUSHED ICE AND A BOTTLE OF BITTER LEMON SODA TO IT AFTER IT HAS COMPLETELY COOLED DOWN!

easy peasy chicken curry

 6 skinless,boneless chicken breasts(chopped)
1 onion(finely chopped)
garlic(to taste)
1 ginger root (grated)
chilli powder(1 tsp)
1/2 teaspoon of turmeric powder
2 medium tomatoes (chopped)
1/2 of garam masala
2 tbs groundnut oil
1/2 tsp of sugar
Salt or maggie to taste
METHOD;
Blend ginger, garlic and onion . Then heat the oil in a pan. When it’s hot, add the sugar.
As soon as the sugar caramelizes add the blended onion,ginger n garlic mixture and cook it on high heat. Stir so it doesn't stick to the pan.
When it changes colour, add the turmeric and chilli . Fry for 5-6 mins and add the tomatoes. Stir for another 5 mins and then reduce the heat and simmer. When the mixture starts giving out some oil. Add some water if it starts sticking.
After 5 minutes, add the chicken. Turn the heat up and cook, stirring the chicken vigorously to mix in the masalas. After 5 mins, add a little water to cover the chicken, lower the heat and stir every 2mins until its cooked.
When the chicken is cooked, stir in the garam masala and salt maggie to taste.

RAMADAN WISHES!

beef fried rice

 BEEF FRIED RICE

INGREDIENTS;

1 TBSP Olive Oil
1/2 of a Large Onion, chopped
1/2 Pepper (green, ylw,red, orange)chopped
3-4 large garlic, (chopped)
1 can of mushrooms(chopped)
1 small can of sweet corn
leftover beef,( chopped)
3/4 cup mixed veggies (carrots, corn , peas, broccoli, cauliflower)
6 large eggs, scrambled
1/4 soy sauce
9 cups of cooked short or long grain rice

METHOD;

Heat oil in large pan or wok.
Add onion, garlic, peppers and cook until tender crisp.
Add canned mushrooms and corn and mixed veggies.
Add soy sauce and meat.
Cook until veggies are tender crisp.
You may have to add a bit of water to keep things from sticking.
Add rice and mix well. Continue cooking until all is heated through.
Add scrambled eggs to mixture.
Salt and pepper to taste.

NOTE; for the best fried rice you should use long grained rice( make sure its not over cooked as this will give u a mushy consistency) the measurements above will serve 5.

shrimp fried rice

 SHRIMP FRIED RICE

INGREDIENTS;

2 1/2 cups cooked rice
3/4 cup chopped onion
1 cup peas and carrots
14 oz. medium cooked shrimp
2 table. extra virgin olive oil
1 1/2 table seseme oil
3 table. low-sodium soy sauce
salt, pepper, and spring onions to taste

METHOD;

Heat olive oil on medium heat. Add onion and saute for 5 minutes. Add rice and cook for 10 minutes. Add the rest of the ingredients ad cook for an additional 10 minutes.

chicken fried rice

€CHICKEN FRIED RICE

INGREDIENTS;

1 lb of boneless skinless chicken breast
1 tbsp of oil
2 cups quick-cook rice, uncooked
2 cups peas and carrots
2 cups water
2 tbsp soy sauce
1-2 cups cooked scrambled egg, unseasoned

METHOD;

Cut chicken into bite size cubes and add to oil in skillet, cook through and brown.
Add water, rice, soy sauce, and peas and carrots.
Bring to a boil, lower heat and simmer 5-7 minutes covered until liquid is absorbed, stirring frequently.
Stir in scrambled eggs and soy sauce to taste.
Makes 4-1 cup servings.

beef yakitori

here is my version of the beef yakitori

BEEF YAKITORI(ummi style)

Ingredients
1/2 Cup soy sauce
2 Tablespoons lemon juice
2 Tablespoons sugar
1 clove garlic (crushed)
1/2 teaspoon ginger (ground)
2 Tablespoons vegetable oil
1 teaspoon sesame seeds
1 pound beef sirloin or tri-tip steak (cubed)
2 green onions (finely chopped)
Instructions
-In a 9×5 inch loaf pan, combine soy sauce, lemon juice, garlic, ginger, oil, sesame seeds and onion.
-Thread meat on 18 to 20 six-inch wooden skewers,
 -pushing the skewer in and out as if you are sewing.
-Place skewered meat in the marinade, turn to coat all sides.
-Cover and refrigerate 4 hours;
- Arrange on broiler pan and broil 5 to 8 inches from heating element or grill over hot coals.
Grill for 2 to 4 minutes;then return to broil 1 minute longer.
Serve hot.

easy porridges

-PATEN DANKALI

INGREDIENTS;
12 large potatoes(quartered)
1 cup Blended onions,tomatoes,red peppers
4 garlic (pasted)
Dried fish
4 tbs groundnut oil
1 1/2 cups of water
Seasoning (to taste)
METHOD;
Soak the dried fish in salted hot water and peel the flesh off the bones then set aside. Fry the blended tomatoes and peppers with the garlic for 5 mins. Add the water and seasoning and bring to a boil, add the potatoes and dried fish and allow to cook on low heat for 20mins.
NOTE; you can add veggies like cabbages and carrots to make it healthier.

PATEN DOYA

INGREDIENTS;
1 yam tuber (qurtered)
1 cup Blended onions,tomatoes,red peppers
4 garlic (pasted)
Dried fish
1/4 kilo of chopped Beef (cooked)
4 tbs groundnut (or palm) oil
3 cups of water
Seasoning (to taste)
Choppe spinach

METHOD;
Soak the dried fish in salted hot water and peel the flesh off the bones then set aside. Fry the blended tomatoes and peppers with the garlic for 5 mins. Add the water and seasoning and bring to a boil, add the yam and dried fish and allow to cook on low heat for 20mins.addd the spinach 5 mins before you take it off the heat( doing this allows the spinach to retain its nutriends)

PATEN WAKE

INGREDIENTS;
2 cups perboiled red beans( use kanwa when perboiling)
1 cup Blended onions,tomatoes,red peppers
4 garlic (pasted)
Dried fish
1/4 kilo of chopped Beef (cooked)
4 tbs palm oil
3 1/2 cups of water
Seasoning (to taste)
Chopped spinach

METHOD;
Soak the dried fish in salted hot water and peel the flesh off the bones then set aside. Fry the blended tomatoes and peppers with the garlic for 2 mins. Add the water and seasoning and bring to a boil, add the beans and dried fish and allow to cook on low heat till beans becomes very soft and is esily mashed with a spoon. Add the spinach 5mins before taking it off the heat.

BRAIDED BREAD

1-1/2 cup warm water
1-1/2 Tbsp. (1/2 oz.) active dry yeast
1/4 cup soft butter or shortening
1 Tbsp sugar
1 tsp salt
4 cups bread flour.

METHOD;

-In large bowl, mix warm water and yeast( wait for a few minutes for it to foam at the top).
- Add butter, sugar, and salt. Stir. Add 3 cups of bread flour and mix well.
- Add in sum of the remaining bread flour to make the dough a LITTLE stiff.
-Turn dough out onto lightly floured surface and knead for 10 minutes, (use your knucles) adding more flour as needed until the dough is firm and smooth to the touch.
-Place dough in greased bowl.
- Turn dough over in bowl so that the top is also lightly greased. Cover with clean cloth and let rise in warm, for 1 hour.
-Punch down the dough, then Turn it out onto lightly floured board and knead out bubbles (gently) for 5 minutes.
-Divide dough into 6 equal pieces. Set 3 pieces aside. Roll out the remaining 3 pieces of dough between your hands, making 3 lines, equal in length. Line strips side-by-side on floured board.
- Braid strips, starting from the center and working to the end, and squeeze the bottom ends together. Braid other side of loaf, from center to end, and squeeze ends together.
- Set braided loaf on greased baking sheet and repeat steps for the remaining 3 pieces of dough.
- Cover loaves with kitchen towel and let rise in a warm, allow dough to rest for 30 minutes or until doubled in size.

-Bake bread for 40 minutes or until bread top is golden brown and the bread sounds hollow when the top is tapped. -Remove bread from baking sheets and let cool on rack.
