YOU'LL NEED:
2 cups of rice
1/2 a coconut(shredded on a grater)
Thyme(pinch)
3 leaves of fresh Parsley(finely chopped)
METHOD:
Par-boil the rice,drain and allow it to cool in a strainer(8mins)
Bring 1 cup of water to a boil and add the coconut and then the rice after 2mins.
Add the thyme and parsley,allow this to simmer till rice is cooked.
You can eat this with a curry sauce, or stew!.
