PASTA SALAD

YOU'LL NEED:
2 handfulls of macaroni(boiled in salted water n drained)
1/2 can of tuna
4 leaves of lettuce(finely chopped)
Black pepper(pinch)
Mayonnaise(2 heaped tbs)
1 hard tomato(cored n chopped)
METHOD
Its simple really, place everytin in a bowl give it a good toss!!!
This recipe serves 1 person

TAMARIND JUICE

for those of u who are wondering, tamarind is called (tsamiya ;))
YOU'LL NEED:
20 tamarind sticks(peeled,and washed)
3 cups of water
1 grated ginger root
1cup of sugar
1 stick of cinnamon
1 lemon (finely sliced)
METHOD:
Boil the tamarind in the 3 cups of water till the colour of the water changes to brown,add the ginger root and cinnamon stick and sugar, all this while stirring gently,take it off the heat when the sugar has dissolved and allow it to cool,strain it and pour in to a jug, use the lemon as a garnish.
This will serve 3

WHOOP,WHOOP HOT ONION SOUP!

Got this recipe from my younger sister.YOU'LL NEED:
1 large onion(shreded on a grater)
Salt(to taste)
10 Pepper corns(grounded)
1ts corn flour.
11/2 cups of water
METHOD:
Put the onion in to the water and boil for 20mins on low heat(cover the pot!)
Add the pepper corns and salt, after 5 mins take it off the heat and strain it, get rid of the chaff and put it back on the heat. mix the corn flour in to a paste and gently add it to the soup, keep stirring till it thickens then take it off the heat and allow it to cool, you can eat this with bread or alone.You can also add chopped mushrooms to this if you like it chewy.
This recipe will serve 2

BUNS!!!

YOU'LL NEED:
2cups of flour(sieved)
1ts of yeast
1 egg(whisked)
1/4 cup of sugar
1/4 cup of water.
METHOD:
Put the flour,yeast and sugar in a bowl,add the water and gently mix, the fold in the egg, cover the batter with cling film and keep in a warm place for 1-2hrs,this will result in a batter that has risen, give it another gentle mix,the heat some oil,and begin to fry the batter in dollops,you can take the dollops out of the oil when they turn brown. sprinkle the finished buns with sugar and enjoy ;)

Coconut rice in a snap!

YOU'LL NEED:
2 cups of rice
1/2 a coconut(shredded on a grater)
Thyme(pinch)
3 leaves of fresh Parsley(finely chopped)
METHOD:
Par-boil the rice,drain and allow it to cool in a strainer(8mins)
Bring 1 cup of water to a boil and add the coconut and then the rice after 2mins.
Add the thyme and parsley,allow this to simmer till rice is cooked.
You can eat this with a curry sauce, or stew!.
This recipe will serve 2

potato salad

YOU'LL NEED:
8 medium sized potatoes(peeled n boiled in salted water)
5 leaves of lettuce(finely chopped)
Half an onion(finely chopped)
1 green pepper(cored n chopped)
1
8 mint leaves(finely chopped)
Mayonnaise(3heaped tbs)
Pepper corns(5 grains grounded)
METHOD:
Quarter the potatoes,add all the chopped ingredients,add the mayo and give it a gentle but thorough mix! you can eat this salad warm or cold.
This recipe will serve 3

fresh fruit popsicles

Got this recipe 4m a good friend( thanks oluchi, mmwah!)
YOU'LL NEED:
A very ripe fruit(we'll use 1 mango)
Mango juice from a carton(2 cups)
Ice tray
Lollypop sticks
LOADS OF SERVIETTES(cuz its a kids' treat!!!)
METHOD:
Peel the mango n blend it(don't add water!)
Sieve the blended mango and add the mango juice to it, pour it in to the ice tray and refridgerate it, when it begins to set, gently stick in the lollypop sticks and allow it to freeze till very solid.

easy tanduri chicken thighs

YOU'LL NEED:
8 chicken thighs(skinned!)
4hot peppers,2onions,4green peppers,1clove of garlic,4tbs of oil,salt,3 maggie cubes,salt,curry n thyme(ALL BLENDED!)
Youghurt(1/2 cup)
Corn flour(2tbs)
METHOD:
Put the blended paste,youghurt and corn flour in to a bowl n mix, then marinade the chicken for 1hr.in an already heated oven, place the chicken and pour abit of the marinade,grill this for 30mins on low heat.
This recipe serves 2.

hot n spicy chicken wings

here is a quick way to make them chicken wings ;)
YOU'LL NEED:
6 chicken wings(I like agric chickens, they r much easier to grill)
2 hot peppers,1onion,1green pepper,garlic,3tbs of oil,salt,2maggie cubes,curry n thyme ALL BLENDED)
METHOD:
Pour the blended paste in to a bowl and marinade the wings for 1hr, then place the wings in an already heated oven,then pour the remaining mix on the wings and grill on low heat for 30mins.

easy peasy grilled fish

Here is an easy grilled fish recipe :D
YOU'LL NEED:
A medium sized whole fish(have this scaled and gutted when buying,and sliced at the under belly so the fish opens like a book ;))
1green pepper,1onion,2hot peppers,clove of garlic(all blended)
Salt,curry n thyme(to taste)
1 lime(sliced thinly)
Foil paper
METHOD: smear the inside and outside of the fish with the now seasoned blended paste,place the limes inside the fish and close it, then wrap it up in the foil and grill for 15 to 20mins!!!
